Grapes are 100% de-stemmed and crushed. Grapes are pressed directly in a pneumatic press to avoid the contact between skins and juices for too long. The free run juice and first press are blended, second press and over are separated to control the tastes. Fermentation at 15°C (59°F) to enhance fruit expression in stainless steel tanks which are equipped with an automatic cooling system. Each grape variety is worked separately, tasted and blended under the control of the winemaker and our wine consultants.
